The menu is a fusion of modern cooking techniques and Pre-Hispanic recipes. Quintana's menu is created with unique indigenous products like flower of the yucca, masa and cactus. All the dishes seek to be authentic and are truly delicious. The rich, spicy mole from Oaxaca is a favorite as well as the grilled lamb in banana leaf. Pumpkin seed sauces, squash blossoms, corn fungus pudding sounds challenging but they are all excellent.
The deserts are not an after thought at Izote, there is a chocolate and nut pastry served with spiced, sweetened coffee, that will blow your mind or for a lighter finish try the Hibiscus blossom sherbert.
